Cocoa Powder
Cocoa powder is generally produced in 2 grades of natural and alkalized forms. Natural cocoa powder is light brown in color but alkalized cocoa powder has a darker color. Natural cocoa powder has a pH of 5.3 to 5.8 while processed cocoa powder (Alkalized) has a pH of 6.8 to 8.1.
Cocoa powder contains various minerals such as calcium, copper and magnesium, potassium, sodium and zinc. these ingredients are found in cocoa powder higher than cocoa butter or liquid cocoa.
